Caprese salad

When I hear someone say "I can't do anything with food", I'm reminded of one of my most favorite summer time dishes: caprese salad.  I will often have it as an appetizer or mid-day snack.

In my *very* simple version, it's just string cheese, sliced on the bias, a sliced tomato, a few leaves of basil, salt/pepper and a drizzle of olive oil.  If you have the time, or want to impress, get fresh mozzarella, but for quick, and easy, don't short change string cheese.  It is, after all, mozzarella.

This is so fresh, so flavorful, and if you grow your own tomatoes, and a little basil, it's something you can pull together in just a couple of minutes.  Simple is best, and often easy goes right along with it.
